White Bean and Mushroom Spaghetti

 

White Bean and Mushroom Spaghetti

Serves 4 portions



Ingredients:

150g wholegrain spaghetti/pasta

 

Sauce

½ jar or 300g cooked white beans i.e. cannelloni beans drained and rinsed

3 tomatoes diced

½ cup cashew nuts soaked in boiling water for 10 minutes, drained and rinsed

3 tablespoons nutritional yeast

½ cup vegetable stock

2 tablespoons balsamic vinegar

3 tablespoons tomato purée

1 tablespoon olive oil

3-4 garlic cloves grated

1 teaspoon ground black pepper

1 teaspoon dried basil

1 teaspoon dried oregano

½ teaspoon dried rosemary

100-125g mushrooms sliced

1 small white onion diced

1 carrot diced

 

Garnish with some fresh chopped parsley or some fresh chopped basil.

 

Preparation:

1.      Cook the pasta/spaghetti according to the instructions. Also leave the cashew nuts to soak in boiling water.

2.      Heat up some of the olive oil in a large wok or pan on a medium to high heat adding one piece of the onion to the pan. Once it starts to sizzle, add in the rest of the onion and the chopped tomatoes. Cook for 4-5 minutes until the onion becomes translucent and the tomatoes become soft.

3.      Add in the garlic and the seasonings. Stir for about 30 seconds so that neither the garlic nor the seasonings burn and wait for the aromas to be released.

4.      Now add in the mushrooms, the carrot, the tomato purée, the vegetable stock and the balsamic vinegar. Bring the mixture to a boil and once it starts to boil decrease the heat and simmer for about 5 minutes.

5.      Add in the nutritional yeast and the beans. Cook for about 2-3 minutes more.

6.      Whilst the mixture is cooking, drain and rinse the cashew nuts and blend them for about 30 seconds to a minute on a fast setting.

7.      Mix in the blended cashews and switch off the heat.

8.      Serve on top of the wholegrain pasta or spaghetti and garnish with fresh chopped parsley or fresh chopped basil.
