Easy Garam Masala Tofu Fusion

This dish is quick and easy to prepare, spicy, tasty and full of nutrients including protein and disease fighting antioxidants! It is also the perfect dish to have after exercise as the spinach contains nitrates that help with exercise recovery.
Preparation time: 5-10 minutes
Cooking time: 10-15 minutes
Serves 2 portions
Ingredients:
400g tofu drained and cubed
1-2 tablespoons olive oil
100-150g mushrooms sliced
1 small handful of spinach shredded
Seasonings:
1 ½ teaspoons garam masala
1 teaspoon onion powder
1 teaspoon garlic powder
⅛ teaspoon ground black pepper
1 tablespoon tamari sauce + a dash more for the spinach
Juice of ½ lemon
Preparation:
- Heat up some of the olive oil in a good quality non-stick pan or in a wok on a high heat with one piece of the tofu. As soon as the tofu starts to sizzle add in the rest and cook for about 2-3 minutes.
- Now add in the mushrooms and the seasonings plus 1 tablespoon of the tamari sauce together with a little bit more of the olive oil. Cook for about 6-8 minutes until the tofu has become crispy. Stir constantly whilst cooking so that the tofu becomes crispy on at least two sides.
- Add in the spinach with a dash more of the tamari sauce. Cook for about 30 seconds until the spinach wilts.
- Switch off the heat, squeeze on the lemon juice and mix through.
- Taste, adjust the seasonings and serve!
