Potato Lentil Soup
Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 potatoes, peeled, chopped
- 1 stalk celery, chopped
- 1 cup red lentils
- 1 clove garlic,chopped finely
- 1 teaspoon dried thyme
- 1/2 teaspoon each of rock salt and ground black pepper
- 1/4 teaspoon ground cumin
- Pinch cayenne pepper
- 4 cups vegetable stock
Method
- In a large saucepan, heat the olive oil over medium heat; cook the onion, celery, lentils, garlic, thyme, salt, pepper, cumin and cayenne pepper, stirring often, until the onion is softened, for about 5 minutes.
- Add the vegetable stock and chopped potatoes, then bring to the boil. Reduce the heat and simmer until the potatoes and lentils are tender, for about 20 minutes.
