Winter Lentil Soup
Ingredients
- 1 tablespoon olive oil
- 4 leeks (cut into 1 inch thick slices)
- 8 to 10 chopped or blended tomatoes
- 2 potatoes cut into 1/2 inch pieces
- 1 bunch of kale chopped
- 1/2 cup brown lentils
- 1 tablespoon fresh thyme
- Rock salt and black pepper to taste
Method
- Heat the oil in a saucepan, add the leeks, stirring occasionally until they begin to soften (for around 4 minutes). Add the tomatoes and cook, breaking them up with a spoon ( for around another 4 minutes).
- Add 6 cups of water and bring the mixture to the boil. Stir in the potatoes, kale, lentils, thyme, 1 1/2 teaspoons rock salt and 1/4 teaspoons black pepper. Simmer until the lentils are tender (for around 30 minutes).
- Taste and add salt, pepper and thyme if needed.
