Mexican Cheese Sauce

Makes 4-6 servings

 

Ingredients:

1 white onion sliced

4 garlic cloves (skin taken off and roughly chopped)

½ -1 of any chili (choose the quantity according to how spicy you want it to be - to minimize heat take out some of the seeds)

1 cup raw cashew nuts

1 ½ cups vegetable broth

1 tablespoon arrowroot powder or starch

½ teaspoon cumin powder

3 ½ tablespoons nutritional yeast

1 tablespoon olive oil

Pinch of Himalayan rock salt

 

Preparation:

  1. Leave the cashew nuts in boiling water for 15 minutes.
  2. Take a saucepan, heat up to a medium to high heat and add in the olive oil and one slice of onion. Wait for it to sizzle and add in the rest of the onion. Cook for about 4-5 minutes until it becomes translucent, then add in the pinch of salt.
  3. Next add in the chopped garlic and continue stirring so that it doesn’t burn. Cook for about 30 seconds until the aroma is released.
  4. Put the onion and garlic mixture into a blender and add in the chili, nutritional yeast, vegetable broth and the cumin. Drain and rinse the cashews and add them into the mixture together with the arrowroot. Put the lid on and blend for 30 seconds to a minute, using the pulse option if your blender has one, until it becomes a nice homogenous liquid.
  5. Put the liquid back into the saucepan and lower it onto a medium heat. Continue stirring through and keep mixing for about 4-5 minutes.
  6. This sauce goes really nice with wholegrain pasta, tacos etc. Top with some chopped coriander leaves and black pepper if having with wholegrain pasta.
