Balsamic White Bean Salad

 

Balsamic and White Bean Salad

Preparation time: 15-20 minutes

 

Serves 2 portions



Ingredients:

½ jar (250-300g) white beans (cannellini beans) drained and rinsed

1 red onion diced

1 red pepper diced

½ green pepper diced

½ cucumber sliced and quartered

3 tomatoes diced

1 small handful fresh parsley chopped

 

Dressing

Juice of 1 lime

2 ½ tablespoons olive oil

1 teaspoon garlic powder

2 ½ tablespoons balsamic vinegar

¼ teaspoon ground black pepper

1 teaspoon dried oregano

⅛ teaspoon sea salt

1 teaspoon cumin powder

 

Goes nicely with either black rice or red rice (or a combination of the two)

 

Preparation:

  1. Drain and rinse the white beans.
  2. Chop up the vegetables for the salad as well as the parsley and mix together with the white beans.
  3. Mix the dressing in with the salad and beans and serve.

Both the lime and the tomatoes contain vitamin C. White beans contain iron in a form called non-haem iron. The vitamin C in the lime and the tomatoes help you absorb the iron from the white beans.

It comes from the white beans which are a very good source of protein as well as antioxidants that prevent chronic disease.
