Balsamic White Bean Salad
Balsamic and White Bean Salad

Preparation time: 15-20 minutes
Serves 2 portions
Ingredients:
½ jar (250-300g) white beans (cannellini beans) drained and rinsed
1 red onion diced
1 red pepper diced
½ green pepper diced
½ cucumber sliced and quartered
3 tomatoes diced
1 small handful fresh parsley chopped
Dressing
Juice of 1 lime
2 ½ tablespoons olive oil
1 teaspoon garlic powder
2 ½ tablespoons balsamic vinegar
¼ teaspoon ground black pepper
1 teaspoon dried oregano
⅛ teaspoon sea salt
1 teaspoon cumin powder
Goes nicely with either black rice or red rice (or a combination of the two)
Preparation:
- Drain and rinse the white beans.
- Chop up the vegetables for the salad as well as the parsley and mix together with the white beans.
- Mix the dressing in with the salad and beans and serve.
Did you know?
Both the lime and the tomatoes contain vitamin C. White beans contain iron in a form called non-haem iron. The vitamin C in the lime and the tomatoes help you absorb the iron from the white beans.
