Orange and Ginger Tempeh

Want something quick to make, high in good quality protein and perfect to have after exercise?

 

Preparation time: 15-20 minutes

Cooking time: 20 minutes

 

Serves 2-4 portions


Ingredients:

Main Ingredients

2 tablespoons sesame oil

400g tempeh diced

1 inch ginger grated (keep peel on for nutrients)

½ inch fresh turmeric grated / ¼ teaspoon turmeric powder

2 garlic cloves grated

2 tablespoons molasses

2 ½ tablespoons tamari sauce

2 teaspoons red wine vinegar

½ head broccoli broken down into florets

3 carrots diced

 

Final Stage Ingredients

1 small handful Swiss chard stems removed and shredded

A few extra drops of tamari sauce

Juice of 2 oranges keeping as much of the fibre as possible

5 tablespoons nutritional yeast

 

 

Garnish with toasted or untoasted sesame seeds

 

Delicious served with any brown rice or quinoa dish

 

Preparation:

  1. Take a large wok and heat the sesame oil on a medium to high heat. Once the oil warm add in the grated ginger, the turmeric and the garlic. Stir and cook for about 30 seconds to a minute until the aromas are released.
  2. Add in the tempeh, the carrots, the broccoli, the tamari sauce, the red wine vinegar and the molasses. Stir and cook for about 8 minutes until the flavours of the liquids have been absorbed.
  3. Now add in the shredded Swiss chard, the tamari sauce, the nutritional yeast and the orange juice. Stir and cook for 2-3 minutes until the Swiss chard starts to wilt.
  4. Garnish with some sesame seeds and serve with wholegrain brown rice or quinoa. Pour the liquid from the bottom of the cooked tempeh mixture over the grain you choose to give it some extra taste.

Where does your protein come from?

It comes from the tempeh which contains about 19% protein. Because tempeh is fermented, the protein and other nutrients are quickly digested and hence absorbed. Therefore it is wonderful to have after exercising!
