Vegetarian Black Bean Soup
Ingredients
- 200g black beans soaked overnight
- 1 tablespoon olive oil
- 1 onion, diced
- 2 fresh chillis chopped
- 1 tablespoon oregano
- 1 teaspoon cumin
- 1/2 teaspoon rock salt
- 1/2 teaspoon black pepper
- 4 cloves garlic
- 3 cups water
- 2 bay leaves
Method
- Cook the black beans in a pressure cooker for 5 whistles.
- Meanwhile heat the olive oil over a medium heat. Add the onion, stir and cook until translucent for about 5 minutes.
- Stir in the chili, oregano, cumin, salt, pepper, and garlic, and cook for another 1 to 2 minutes, until you can smell everything.
- Add the black beans, stir, and cook for 1 to 2 minutes more.
- Stir in water and bay leaves. Bring the soup to a boil. Reduce the heat and simmer for around 20 minutes until ready.
